I have also verified that my google account is setup properly by making a python script that successfully sent an email.

When you run with docker-compose up, docker will attach to the processes and output logs to your terminal.

Another option for validation would be to run clone the repository per the instructions with the --recursive flag, then run Calendso directly as a node process, to check your configuration and rule out docker

I guess cannot check the log file that you shared on pastbin.
or you can check if you allowed your email for SMTP connection from gmail settings.
