I like the idea, that's like a "favorite tags" feature, right?

It's a nice idea! I would like to receive new questions of my favorite tags in my box.

I think this would be an awesome thing to have! Plus, with a set of tags favorited by the user, Solr searches will return more relevant results. The code for this searching is already written, the controller would just have to fetch the tags when it called the search method: https://github.com/caelum/mamute/blob/master/src/main/java/org/mamute/search/SolrQuestionIndex.java#L73

Yes, I would also like to "subscribe" to tags, either by email or possibly as an RSS feed. It would also be nice to be able to subscribe to all new posts. This would help in the beginning of a mamute setup, when hardly any content, nor any tags are available.
Edit: I just noticed that rss feeds are already available, e.g. under /rss or /rss/[tag]
Cool :-)

Did anyone spend some thoughts on the functional requirements yet?
- where would we place a button to subscribe to a tag?
- how would a user unsubscribe from a tag?
- which actions would generate an email (apart from creating a question obviously - what about during "edit question" when a tag is added or what about answers/comments to a question)?
I may be able to spend some time on implementing this, but we first have to define how an initial solution would look like.
