does this esphome setup work well with your jura machine?
is it possible to select only hot water and coffee or are there other options?

I just tried to flash this component/config on a generic esp32-wrover and with recent ESPHome (2024.5.3), it is boot-looping for me without anything actually attached.
I'm not sure if this repo is maintained or not so I just wanted to let you and other people know. If there is interest, I could provide more details – even if there isn't that much, because the core is crashing and not only the component.
I would assume that this would need to be ported as a newer (https://esphome.io/components/external_components.html) to make this work again…
Anyway, thanks for your prior work in helping the community to make the most out of their beloved coffee makers! <3
