If somone could elaborate why this was necessary I would really appreciate it

The UDP ranges of :

• bbb-webrtc-sfu
• bbb-webrtc-recorder
  still show null-null on bbb-conf --check

I'd have to know the results and actions of each of the steps you mentioned that were executed in the issue to know what was wrong with the setup. Probably something was missed in the FW configuration phase, or even the update phase, that left the server with incomplete domain/IP configs.
When in doubt, run --setip :)

As for the nullish port outputs from bbb-conf, they're benign but will be adjusted.
