Please update your custom policy...

Add the following line:
<Item Key="SendTokenResponseBodyWithJsonNumbers">true</Item>
in your 'JwtIssuer' technical profile (it should be in your base file).

Final result:

      <DisplayName>JWT Issuer</DisplayName>
      <Protocol Name="None" />

I changed the JWT issuer technical profile with the required metadata you mention, now the values indeed in numeric format (and not string any more) and the demo web app works well. I just wanted to take a moment to sincerely thank you for all of your help and assistance.

Hi @yoelhor , this is a known issue with custom policies + access tokens.
We're working on getting this resolved.

Adding @parakhj and @rojasja for visibility
