Can't specify timestream query endpoint about aws-elixir

I think an option to override the host is desirable, but I haven't thought about the entire endpoint. I think this can be made by defining a pattern to tell the AWS.Request to "keep" the given endpoint or host.
I think in something like this:

client = %{client | endpoint: {:keep, "mycustomendpoint.amazon.com"}}

It could also be a function at AWS.Client. Maybe AWS.Client.set_custom_endpoint(client, "endpoint").

And at the AWS.Request we would pattern match into the endpoint value and keep it if the client is configured this way. WDYT?

@jonathanhood I implemented a slightly different way to fix this issue. Can you try this with the master branch?

client = AWS.Client.put_endpoint(client, "your-custom-endpoint.com")

And make the request with this client.
This function also accepts a function to build the endpoint manually. You can check the options it accepts in the PR #91 .
