I'll be super honest with you: Given this works in a non-trimmed scenario (e.g., without the linker and AOT trimming and all that) and none of the folks on the project are Xamarin users, you're likely going to be pretty well on your own here. I know I don't personally have time, much as I'd like, to offer free consulting hours to both learn Xamarain and how to configure the linker (that info on the page was contributed by the community); and dive into this and debug your linker configuration.
I'll leave this issue open for a few months to see if someone else from the community might be able to help, but generally you'll have better luck on Stack Overflow where there are more tags, more community members, and more eyeballs that have different sets of knowledge and can contribute to answers. That's why we have "How do I...?" questions ("How do I configure the linker...?") pointed there instead of here.
